Recipe 8: Baked Mashed Potatoes

I'm sure I've said this once before, but leftovers definitely make for the best dishes out there. Though I've used store bought mashed potatoes in this particular recipe, the original recipe was created for left over mashed potatoes. So feel free to substitute the store bought mashed potatoes mix with your left over mashed potatoes. Without anymore blabbering about how great leftovers can be, lets go over the ingredients.


Ingredients:

Mashed potatoes- 3 packets  or 1½ boxes (if your using leftovers, you'll have to gauge the rest of the ingredients based on how much mashed potatoes you have left)
Tomatoes- 3 medium, chopped
Green onions- 4 sprigs, chopped
Cheddar cheese- 1½ cups
Dried oregano- 1tsp
Dried thyme- 1tsp
(substitute oregano and thyme with Italian seasoning if you'd prefer, its much cheaper and has both herbs and more)
Milk- ½cup
Butter- ½stick
Sea salt or table salt (to taste)
Black pepper- 1tsp

Preparation:

Step 1) Preheat your oven to 350 degrees fahrenheit and prepare your store bought mashed potatoes following the instructions on the box and set the mixture aside

Step 2) Put your butter into the milk and warm them over medium heat until the butter is melted

Step 3) Pour the butter and milk mixture into the mashed potatoes and stir until its nice and creamy. I know this may seem a bit too creamy, but when it's in the oven it will lose some moisture.

Step 4) Mix your oregano, thyme, salt and black pepper into the mashed potatoes. Make sure you gauge the amount of salt you add based on your preference.

Step 5) Put your mixture into a casserole dish or a baking dish then top with cheese (use as little or as much cheese as you want).

Step 6) Place your casserole dish into your preheated oven for 30 minutes and then top with tomatoes and green onions. Return the casserole dish back into the oven for an additional 5-10 minutes or until the top has formed a light golden brown color.




And that's it. This time around I served my baked mashed potatoes with some Italian meatloaf and gravy. But you can serve it with some steak as well. It makes for a very hearty dinner.
